BANG BANG CHICKEN CUCUMBER ROLL
Serves 1

Ingredients:
1 regular cucumber
180g raw chicken breast
1.5 tbsp light cream cheese
20g praise light mayo
1.5 tbsp sriracha (half for the sauce)
3 thin slices of avocado
2 tbsp chopped spring onions
1 tsp sesame seeds
Method:
Boil the chicken for 10 minutes or until fully cooked through. Shred with an electric mixer or 2 forks. Combine the chicken with the greek yoghurt, mayonnaise and half the sriracha
Use a potato peeler to finely slice the cucumber into strips. Pat gently with a paper towel to remove moisture
On a chopping board, lay down each strip closely on top of each other to make the base layer. Pat dry with paper towel again
