COTTAGE CHEESE BREAKFAST WRAP

Ingredients:
250g high protein cottage cheese
1 tsp Mingle bagel seasoning
1/2 avocado (mashed)
3 slices of tomato
2 short cut bacon strips
1 egg
1 tbsp sriracha mayo
1 tbsp finely chopped spring onions
Salt & pepper to taste
Method:
Preheat the oven to 180 degrees celsius and line a tray with baking paper. Spread the cottage cheese evenly across the baking paper (approx. 1 cm thick) and top with bagel seasoning
Place in the oven for 20 minutes then remove and wipe up excess water on the tray with a paper towel. Push cottage cheese back into shape with a spatula if it has slipped. Place back in the oven for another 20 minutes or until fully cooked/looking crispy
Meanwhile cook your bacon till crispy and fry the egg
Remove cottage cheese wrap from the baking paper and spread the avocado across one half. Top with tomato, crispy bacon, fried egg, salt, pepper sriracha mayo, and spring onions
Fold and enjoy!
