CHICKEN WAFFLE CAESAR SANDWICH
Serves 1
398 calories, 65g protein, 18g carbs, 12.5g fat.
Ingredients:
150g raw chicken breast
1 tsp paprika
1 tsp garlic salt
1 medium egg
1/2 cup roughly chopped cos lettuce
3 tbsp grated parmesan
70ml light Caesar salad dressing
1 slice short cut bacon
Method:
Boil the chicken breast until fully cooked through. Shred with a fork or an electric beater.
Combine the chicken, egg, paprika, garlic salt and 2 tbsp of parmesan
Place the chicken mixture into the waffle maker and cook for approx. 8 minutes or until crispy
Meanwhile, mix the lettuce with half the Caesar dressing and cook the bacon in a pan until crispy
Assemble the waffle sandwich with the lettuce, bacon, remaining parmesan and Caesar dressing then add the other chicken waffle on top
Cut down the middle and enjoy!
