Ingredients:
200g egg whites
1 tsp oregano
1 tsp pepper
1/2 tsp salt
120g shredded chicken breast
1 tsp peri peri seasoning
1 tbsp tomato paste
1/2 cup rocket (or arugula)
1/4 capsicum thinly sliced (red or green)
1 tbsp homemade caramelised onions
70g light shredded mozzarella cheese
1/2 red chilli, sliced (optional)
1.5 tbsp Nandos Perinaise (22.5g)

Method
Preheat oven to 180 degrees celsius
Whip the egg whites with an electric mixer until a stiff peak forms. Add the oregano, salt and pepper then lightly mix in
Spread the egg white mixture into a pizza base shape on a lined baking tray (approx. 1-2cm thick) and place in the oven for 20 minutes or until it looks light brown
Meanwhile, combine the chicken and peri peri spice
Remove from the oven and assemble the pizza with tomato paste, rocket, capsicum, peri peri chicken, cheese and chilli
Place back in the oven for 10 minutes or until the cheese is golden bubbly
Remove from the oven and top with perinaise sauce and basil
Slice and enjoy!
