HONEY CHIPOTLE CHICKEN TACOS 🔥
Dinner that tastes slow cooked - but it's ready fast in under 40 minutes (and full of flavour)! Tutorial video included.
Make these mouthwatering chipotle honey shredded chicken tacos in just 40 minutes using the Breville Fast Slow Pro Multicooker from appliancesonline.com.au. Serves 4
3 tacos per serve
Ingredients:
600g chicken breast
150g chipotle adobo sauce
1.5 tbsp tomato paste
2 tbsp honey
500ml chicken stock
1/4 red cabbage
12 cherry tomatoes, quartered
1/4 red onion, finely diced
3 tbsp chopped coriander
Salt & pepper to taste
1 tbsp corn flour
1 avocado, sliced
1 lime
100ml light greek yoghurt
12 soft tortilla tacos
Tabasco (optional)
Other optional toppings: black beans, corn, carrot, roast capsicum
Method:
Place the chicken breast in the Breville Fast Slow Pro Multicooker. Cover the chicken in chipotle, tomato paste, honey and chicken stock. Toss to coat
Set the function to pressure cooker > custom > 20 minutes > 70 kPa. Start cooking
Meanwhile, shred your cabbage and toss with a squeeze of lime
Make the pico de gallo by combining the tomatoes, red onion, coriander, lime, salt & pepper
Combine the corn flour in 2 tbsp of water to create the “slurry”
When the chicken is cooked, release the pressure using the pressure valve and remove the chicken from the pot. Pour the slurry into the pot, stir and turn the multicooker to “reduce” on high for 5 minutes with the lid open
Meanwhile, shred your chicken with a fork.
When the sauce has reduced, add the chicken back to the multicooker and toss to coat in the sauce
Cook the soft tortilla tacos to your liking and assemble with cabbage, the honey chipotle chicken, pico de gallo, avocado slices, dollop of yoghurt and tabasco
