SWEET CORN ELOTE STYLE WAFFLE
Ingredients:
1 can of corn (420g)
2 tbsp icing sugar
1 tbsp plain flour
1 tsp salt
50g crumbled cotija (Mexican cheese)
1 tbsp finely chopped coriander r
1 tbsp sriracha mayo
1 lemon wedge for serving (optional)
Method:
Drain the corn and mix with the plain flour, half the icing sugar and salt
Place the mix in a waffle maker until fully cooked and crispy (approx. 5-8 minutes)
Remove and top with the remaining icing sugar, cheese, coriander and sriracha mayo
