COTTAGE CHEESE BREAKFAST TACOS
Serves 1
324 calories, 35g protein
Ingredients:
150g high protein cottage cheese
2 medium eggs
1 rasher shortcut bacon
1/4 cup rocket
1/4 tomato into 2 slices
2 tbsp pickled onions
Coriander
Pinch of mingle Greek seasoning
Method:
Preheat oven to 180 degrees celsius
Line a baking tray and make two even circles with the cottage cheese
Place in the oven for 10 mins and then remove and wipe up excess water with a paper towel. Use a spatula to push the cottage cheese back into a circular shape. Bake for another 10 minutes
