TUNA CRISPY RICE PAPER CHIPS

Ingredients:
2 rice paper sheets
1 cup vegetable oil
1/2 an avocado finely sliced
100g finely sliced sashimi grade tuna
2 tbsp kewpie mayo
2 tbsp sriracha mayo
1 spring onion (finely chopped)
Sauce: 1 tbsp soy sauce, 1 tsp kecap manis, 1 tsp sesame oil, 1 tsp sesame seeds
Lime wedges
Method:
Cut the rice paper sheets into strips then into rectangles
Pour oil into a shallow pan and bring to a smoking point on high heat. Carefully drop each rice paper sheet in and remove immediately with tongs after it has “puffed.” Lay directly onto paper towel to absorb excess oil.
Lay the rice paper sheets down on a plate and top with the avocado, fresh tuna, kewpie mayo, sriracha, spring onions the sauce and lime wedges.
