CRISPY SALMON RICE PAPER SUSHI

Ingredients:
4 rice paper sheets
1/2 cup uncooked sushi rice (with rice wine vinegar and sesame oil)
120g raw sashimi grade salmon
4 nori “chips” or seaweed sheets
8 thin avocado slices
8 thin cucumber slices
2 tbsp kewpie mayo
1/4 cup loosely packed spring onions
1/2 cup sesame seeds
Olive oil spray
Dipping sauce: 1 tsp kecap manis, 1 tsp soy sauce.
Method
Cook sushi rice to packet instructions. Mix in 1 tsp of rice wine vinegar and sesame oil once cooked.
Wet rice paper sheets in shallow water for 5 seconds till slightly soft
Layer rice paper with nori, rice, cucumber, avocado, salmon, kewpie mayo, spring onions and fold as per the video
Roll in sesame seeds on all sides
Pan fry for 2-3 mins turning on all sides till crispy
Serve with sauce and enjoy!
CRISPY PRAWN RICE PAPER CRACKERS

Ingredients:
2 cups vegetable oil
1 rice paper sheet
8 peeled prawns
1/2 cup finely chopped romaine lettuce
8 thin slices of avocado
4 tsp chives
1 tbsp sesame seeds
1 tbsp sriracha mayo
Lemon wedge for serving
Method
Cut the rice paper sheet into 4 quarters
Heat oil till smoking point and drop each rice paper sheet in one by one with tongs. Placing each one on a paper towel after frying (to absorb excess oil)
Layer each rice paper sheet carefully with the lettuce, prawns, avocado, chives, sesame seeds, sriracha mayo and lemon.
RICE PAPER CHEE CHEONG FUN

Ingredients:
4 rice paper sheets
16 small green prawns
1/2 cup finely chopped spring onions
Sauce: 1 tbsp rice wine vinegar, 1 tbsp soy sauce, 1 tbsp kecap manis, 1 tsp sesame oil
Toppings: 1 tsp sesame seeds, 1 tsp crispy onions, 1 tbsp chilli oil
Method
Lightly wet each rice paper roll for 5 seconds before laying on the chopping board
Lay the semi wet rice paper roll with the prawns, spring onion and fold like the video
Steam the 4 rolls for approx. 8 minutes or until prawns are orange and cooked through
Meanwhile, mix together the sauce ingredients
Pour sauce over the steam rolls and top with the sesame seeds, crispy onions and chilli oil.
